Blend: Chisel Jersey 44%, Dabinet 35%, Wickson 17%, Porter's Perfection 4% Nose: Apricot and jasmine Palate: Velvety with mild acid. Apricot, peach, and mineola Finish: Medium bitterness and generous astringency. Unfiltered & Dry, 0% residual sugar.
SUSAN'S SEMI-DRY 2021 | ABV 8.6% | Petillant
Blend: Harrison 46%, Baldwin 46%, Zaubergau Reinette, Karmijn De Sonneville, Newtown Pippin. Nose: Very floral, apple and pear with hints of lime zest and the forest. Palate: Acid and spice lead to vanilla and orange. Finish is bitter and mouth coating, along with apple and continued orange. 0.5% residual sugar.
CACKLING HEN SEMI-SWEET 2021 | ABV 7.0% | Petillant
Blend: Dabinett 35%, Ellis Bitter, Harry Master's Jersey, Tremlett's Bitter, Golden Russet, Chisel Jersey, Newtown Pippin, Ribston Pippin. Nose: Apple, spice, vanilla custard (apple pie). Palate: Abundant apple, moderate sweetness balanced with medium acidity and a touch of astringency. Concord grape on finish. 1.5% residual sugar.
O TANNIN BOMB 2021 | ABV 8.1% | Petillant
Blend: Harry Master's Jersey 35%, Dabinett, Ellis Bitter, Tremlett's Bitter, Wickson, Liberty. Nose: Wet slate, violet, paw paw. Palate: Saline, spice, light acidity and light apple, bitterness builds on the finish. 0.5% residual sugar.

Blend: Dabinett 37%, Harry Master’s Jersey, Baldwin, Wickson, Puget Spice, Zaubergau Reinette, Goldrush, Yarlington Mill. Nose: Fresh, Apple, Spice, Deeply Floral, Toffee, Mineral Water. Palate: Sweet Fresh Apple & Spice. Becomes more herbal & woodsy, astringency kicks in. Full of flavor, moderate on acid. 1.5% r.s.

Blend: Chisel Jersey 42%, Baldwin 26%, Golden Russet 20%, Northern Spy 12%. ABV: 8.2%. Visual: Gold slightly cloudy. Nose: Grapefruits, oranges, violets, and allspice. Palate: Concord grapes and fresh orange with mild astringency and bitterness. Lightly filtered. 0% residual sugar.
STURM UND DRANG 2021 | ABV 8.4% | Petillant
Blend: Chisel Jersey 60%, Harry Master's Jersey, Dabinett, Liberty, Redfield. Tank Fermented. Nose: Intense aromas of dried apricot, orange, herbs, and brandy. Palate: Expansive apricot, orange, and apple followed by herbal notes and moderate bitterness, ending in pronounced astringency.
